Ingredients
  

  • 1 lb ground beef Lean ground beef can be used for less fat.
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (6 oz) tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper Optional, for a spicy kick!
  • To taste salt and pepper
  • 2 cups beef broth
  • 2 tablespoons olive oil For sautéing.

Instructions
 

  • Heat the olive oil in a large pot over medium-high heat and add the diced onion. Cook for 3-4 minutes until soft and translucent.
  • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Brown the ground beef, breaking it up with a wooden spoon, for 5-7 minutes until no longer pink.
  • Add the chili powder, cumin, smoked paprika, and cayenne pepper, stirring well to coat.
  • Stir in the tomato paste and cook for another 2-3 minutes.
  • Pour in the diced tomatoes and beef broth, and season with salt and pepper. Bring to a simmer.
  • Lower heat and cook for 20-25 minutes, allowing flavors to meld and the chili to thicken.
  • Add kidney beans and black beans, stirring to combine, and let simmer for another 10-15 minutes.
  • Taste and adjust seasoning, adding more salt or chili powder as desired.
  • Serve in bowls with your favorite toppings.

Notes

This chili can be served with shredded cheese, sour cream, cornbread, rice, or tortilla chips. It freezes well for up to 3 months.
