Base Ingredients

  • 10 large eggs
  • 0.5 cup milk or cream
  • 1 cup shredded cheddar cheese
  • 0.5 cup chopped vegetables (bell peppers, tomatoes, onions)
  • 0.5 cup cooked crumbled bacon or sausage optional
  • 0.5 cup chopped turkey optional
  • Salt to taste
  • Pepper to taste
  • Non-stick cooking spray

Cooking Instructions

  • Preheat your oven to 350°F (175°C).
  • Generously spray a muffin tin with non-stick cooking spray.
  • Chop up any vegetables and pre-cook bacon (if using).
  • In a mixing bowl, whisk together eggs, milk or cream, salt, and pepper until well combined.
  • Place a handful of chopped veggies, meat, and a bit of cheese into each muffin tin cavity.
  • Pour or spoon the egg mixture into the muffin tin, filling each cup about ¾ full.
  • Stir each muffin cavity with a fork to mix the ingredients.
  • Bake for 12-18 minutes until set and lightly golden.
  • Let cool for a few minutes, then gently remove from the tin.
  • Serve warm or store leftovers in the refrigerator or freezer.

Notes

Leftovers can be stored in the refrigerator for up to 4 days, or frozen for up to 2 months. Reheat in the microwave for 10 seconds when ready to eat.
