Bread

  • 1 loaf Italian loaf, french loaf, or baguette Approximately 364 g

Toppings

  • 1 tablespoon extra-virgin olive oil Plus more for brushing
  • 0.5 teaspoon kosher salt Plus more for seasoning
  • 1 clove garlic Peeled and cut in half
  • 2 pounds roma tomatoes About 10 tomatoes, diced
  • 0.25 cup white onion Finely minced
  • 0.25 cup basil leaves Thinly sliced
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon finely minced garlic
  • 0.25 teaspoon black pepper

Instructions
 

Preparation

  • Preheat the oven to 450ºF (232ºC).
  • Cut the bread into ½" or ¾" thick slices.
  • Brush both sides with olive oil, sprinkle with salt, and bake until lightly browned, about 5 minutes per side.
  • Rub the cut-side of garlic on the toasted bread for extra flavor.
  • Dice tomatoes and combine in a medium bowl.
  • Add onions, basil, balsamic vinegar, minced garlic, salt, and pepper to the tomatoes. Stir in olive oil.
  • Top the toasted bread with the tomato mixture and serve immediately.

Notes

For a stronger garlic flavor, add 2 teaspoons of minced garlic instead of 1 teaspoon.
