Ingredients
  

Wet Ingredients

  • ¾ cup unsalted butter softened
  • 1 cup light brown sugar
  • 2 egg yolks
  • 2 teaspoon vanilla
  • ½ cup canned pumpkin puree

Dry Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup granulated white sugar

Baking Instructions

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, mix together granulated sugar and pumpkin pie spice; set aside.
  • In a large bowl, cream softened butter and brown sugar until smooth. Add egg yolks, vanilla, and pumpkin puree; mix well.
  • In another bowl, combine flour, baking soda, baking powder, salt, and remaining pumpkin pie spice. Gradually add to wet ingredients until just combined.
  • Drop spoonfuls of dough onto lined baking sheets. Sprinkle with sugar mixture.
  • Bake for about 12 minutes until edges are golden but centers remain soft. Cool on wire racks.

Notes

For best results, do not overmix the dough.
