For a thicker sauce, you can remove 1–2 tablespoons of the sauce to a small bowl and whisk in 1 tablespoon cornstarch until smooth. Whisk this mixture back into the curry sauce. Store leftover Coconut Chicken Curry in an airtight container in the fridge for up to 3 days. You can also freeze it for up to 3 months. Reheat in the microwave or on the stove, adding a splash of coconut milk if needed to loosen it up.
