Ingredients
  

  • 1 tablespoon butter
  • 1 medium onion, diced
  • 2 large carrots, sliced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 cup wild rice
  • 2 cups shredded cooked chicken
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt to taste
  • Pepper to taste
  • 1 cup heavy cream
  • 2 tablespoons flour
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Melt butter in a large pot over medium heat.
  • Add onion, carrots, and celery. Cook until vegetables are tender, about 5-7 minutes.
  • Stir in garlic and cook for another minute.
  • Pour in the chicken broth and bring to a boil.
  • Add wild rice, shredded chicken, thyme, rosemary, salt, and pepper.
  • Reduce heat and let simmer for 45 minutes, or until rice is tender.
  • In a small bowl, whisk together heavy cream and flour until smooth.
  • Stir the cream mixture into the soup and cook until thickened, about 5-7 minutes.
  • Garnish with fresh parsley before serving.
