Ingredients
  

Pasta and Vegetables

  • 8 ounces penne pasta
  • 2 cups fresh broccoli florets, quartered approximately 182 g

Protein and Dairy

  • 13.9 ounces kielbasa sausage, cut into bite-sized slices
  • 1.5 cups whole milk approximately 367.5 g
  • 1.5 cups shredded mild cheddar cheese approximately 169.5 g
  • 2 tablespoons unsalted butter

Aromatics

  • 1 small yellow onion, diced about ½ cup
  • 1 teaspoon minced garlic
  • Salt and pepper to taste

Cooking Instructions

  • Boil the penne pasta according to package instructions. In the last 2 minutes of cooking, add broccoli florets. Drain and set aside.
  • In a large skillet over medium heat, melt the butter. Add sliced kielbasa and cook until lightly browned, about 5 minutes.
  • Stir in the diced onion and minced garlic. Cook for 2-3 minutes until the onion is soft and fragrant.
  • Whisk cornstarch into whole milk in a small bowl. Pour into skillet and simmer, stirring until the sauce thickens, about 3-5 minutes.
  • Reduce heat to low and gradually mix in shredded cheddar cheese, stirring until melted and smooth.
  • Add cooked pasta and broccoli to skillet, tossing to coat in sauce. Season with salt and pepper. Garnish with parsley and serve hot.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. Cool completely before storing to maintain best texture.
