Ingredients
  

Carrots

  • 2 pounds carrots peeled and cut into diagonal pieces

Olive Oil

  • 3 tablespoons extra-virgin olive oil divided

Seasoning

  • ¾ teaspoon fine sea salt divided, to taste
  • ½ teaspoon ground coriander
  • ¼ teaspoon ground cumin
  • to taste freshly ground black pepper

Vegetables and Broth

  • 1 medium yellow onion chopped
  • 2 cloves garlic pressed or minced
  • 4 cups vegetable broth or water
  • 2 cups water

Finishing Touches

  • 1 to 2 tablespoons unsalted butter to taste
  • 1 ½ teaspoons lemon juice to taste

Instructions
 

Preparation

  • Preheat the oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper, if desired.
  • Peel and cut the carrots on the diagonal to about ½" thick.
  • Place the carrots on the baking sheet, add 2 tablespoons olive oil and ½ teaspoon salt, and toss to coat.
  • Roast the carrots until caramelized and tender, about 25 to 40 minutes, tossing halfway.

Cooking the Soup

  • In a Dutch oven or soup pot, warm the remaining 1 tablespoon olive oil over medium heat.
  • Add the onion and ¼ teaspoon salt; cook until softened, about 5 to 7 minutes.
  • Add garlic, coriander, and cumin, stirring continuously for about 30 seconds.
  • Pour in vegetable broth and water, scraping any browned bits from the bottom.
  • Add roasted carrots to the pot; bring to a boil, then simmer for 15 minutes.
  • Remove from heat and let cool slightly before transferring to a blender.
  • Blend the soup until smooth, adding butter, lemon juice, and black pepper.
  • Adjust seasoning to taste and serve.
  • Store leftovers in the refrigerator for about four days or freeze for several months.
