Salad Ingredients

  • 1 large cucumber julienned or sliced thin
  • 2 medium carrots julienned
  • 2 tablespoons sesame seeds
  • 2 tablespoons fresh parsley chopped
  • 1 clove garlic minced

Dressing Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon gochugaru (Korean red chili flakes)
  • 1 teaspoon soy sauce
  • ½ teaspoon sugar

Instructions
 

Salad Preparation

  • In a large mixing bowl, combine the julienned cucumber and carrots.
  • Add the sesame seeds, parsley, and minced garlic to the bowl.
  • In a separate bowl, whisk together the olive oil, lemon juice, gochugaru, soy sauce, and sugar.
  • Pour the dressing over the salad and toss to combine thoroughly.
  • Serve immediately or chill in the refrigerator for 10 minutes before serving.

Notes

You can experiment with different dressings and add nuts for extra crunch.
