Grilled Salmon a la Boursin

Deliciously grilled salmon fillets topped with creamy Boursin cheese and served with a refreshing cucumber relish.

Ingredients
  

Salmon Fillets

  • 4 pieces salmon fillet approx. ½ lb pieces
  • 2 tablespoon lemon juice
  • salt to taste
  • pepper to taste
  • 1 pkg Boursin Cheese

Cucumber Relish

  • 1 large cucumber diced
  • 1 cup radishes diced
  • 2 tablespoon dill finely chopped
  • 2 tablespoon olive oil
  • 2 tablespoon lemon juice
  • salt to taste
  • pepper to taste

Instructions
 

Grilled Salmon

  • Preheat grill or broiler on high.
  • Sprinkle salmon fillets with lemon juice, salt and pepper.
  • Grill or broil about 8 minutes.
  • Spoon about 3 tablespoons Boursin cheese on top of each fillet and continue cooking for another 2 minutes until salmon is cooked through and Boursin has softened.

Cucumber Relish

  • Combine all the relish ingredients into a medium bowl.
  • Toss until evenly mixed.
  • Portion out for each salmon fillet and serve either on top of or underneath the grilled salmon.

Notes

This dish is perfect for outdoor grilling on a summer evening. Adjust seasoning to personal preference.
