Ingredients
  

  • 12 slices ham
  • 1 cup shredded cheddar
  • 12 large eggs
  • Kosher salt
  • Freshly ground black pepper
  • Finely chopped fresh parsley for serving
  • cooking spray

Instructions
 

  • Arrange a rack in center of oven; preheat to 400º. Grease a standard 12-cup muffin tin with cooking spray.
  • Line each prepared cup with a slice of ham and sprinkle with cheddar. Crack an egg into each ham cup; season with salt and pepper.
  • Bake egg cups until eggs are cooked through, 12 to 15 minutes (depending on how runny you like your yolks).
  • Top with parsley.
