Base Ingredients

  • 2 tablespoons olive oil
  • 12 ounces beef smoked sausage, sliced
  • 1 onion, diced
  • 1 pinch salt
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon paprika
  • 3 cloves garlic, pressed
  • 2 medium-large carrots, peeled and diced
  • 2 medium-large parsnips, peeled and diced
  • 2 ribs celery, diced
  • 6 baby yellow potatoes, cubed skin on
  • 8 ounces diced butternut squash
  • 6 cups chicken or beef stock
  • 1 cup chopped kale
  • 1 tablespoon chopped parsley

Preparation Steps

  • Gather and prep all ingredients as per the list to have ready for use.
  • Place a large soup pot over medium-high heat, drizzle in about 2 tablespoons of oil. Once hot, add in the sliced sausage and allow it to caramelize for a few minutes, then stir and caramelize for another 2 minutes.
  • Add in the onion and sauté with the sausage for 3-4 minutes until lightly golden. Add Italian seasoning, paprika, black pepper, salt, and garlic, then stir to combine.
  • Add carrots, parsnips, celery, potatoes, and butternut squash, stirring to combine. Pour in the chicken or beef stock and bring to a boil.
  • Reduce heat to medium-low, allow the stew to simmer uncovered for 40 minutes.
  • Turn off heat and check for additional salt or pepper if needed. Stir in kale and chopped parsley, allowing kale to wilt before serving.
  • Ladle the stew into bowls and serve with good quality bread on the side.

Notes

Using good quality smoked sausage enhances flavor. Feel free to substitute with turkey or chicken sausage for a lower-fat option. The stew becomes more flavorful as it sits, so consider making it ahead of time.
