Ingredients
  

Chicken and Garnish

  • 2 lb chicken thighs, boneless, skinless or mix with breasts
  • 3 tablespoon fresh cilantro, chopped for garnish
  • 3 stalks green onions, chopped for garnish

Marinade

  • 20 oz pineapple rings plus ¾ cup juice
  • cup soy sauce low sodium preferred
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced or 1 teaspoon garlic powder
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoon brown sugar
  • cup ketchup
  • 2 teaspoon tomato paste
  • ½ teaspoon red pepper flakes
  • ½ teaspoon nutmeg
  • ¼ teaspoon chili powder

Optional Ingredients

  • long grain white rice
  • avocado slices

Instructions
 

Preparation

  • Prepare the Hawaiian BBQ marinade by adding all the marinade ingredients and whisking well. Set aside.
  • Prepare the chicken by patting it dry and adding it to a large ziplock bag or deep bowl. Pour ½ of the marinade over the chicken, mixing well to ensure it's fully coated. Cover and refrigerate for 20 minutes to 24 hours.
  • Bring the refrigerated leftover marinade to a simmer in a small saucepan and simmer for 5-10 minutes.

Grilling The Chicken

  • Heat the grill to medium. Place the chicken on the grill and cook for about 3-4 minutes on each side, basting with the thickened marinade, until the internal temperature reaches 165ºF.
  • Add the pineapple rings to the grill for the last 4 minutes of cooking.
  • Let the chicken rest for about 5 minutes before serving. Garnish with cilantro and green onions.

Air Frying Instructions

  • Add the chicken to the air fryer and cook on 350ºF for 15-18 minutes, basting halfway through until it reaches 165ºF internally.
  • Warm the pineapples in a skillet or serve at room temperature.

Oven Instructions

  • Preheat the oven to 375ºF. Add the chicken to a non-stick baking sheet and bake for 16-18 minutes, basting halfway through until it reaches 165ºF internally.
  • Warm the pineapples in a skillet or serve at room temperature.

Notes

Don’t overcook the chicken! Use a digital thermometer. Cook however comfortable you are, grilling is recommended. Taste the marinade beforehand and adjust flavors as needed. Leftovers store in an airtight container for up to 4 days and can freeze for 2 months.
