Honey Carrot Pie: An Easy, Indulgent Twist on Tradition

Ingredients
  

For the Crust

  • 1.75 cups Biscoff cookie crumbs
  • 6 tablespoons unsalted butter melted
  • 0.25 cups light brown sugar lightly packed
  • 1 pinch kosher salt

For the Filling

  • 16 ounces carrots peeled and sliced into ½" pieces
  • 0.5 cups pure clover honey
  • 0.25 cups granulated sugar
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon coarse kosher salt
  • 3 large eggs
  • 0.5 cups heavy cream

  • Preheat the oven to 350º and place a rack in the center of the oven.
  • In a bowl, mix together the biscoff cookie crumbs, melted butter, brown sugar and salt. The mixture should be damp, like wet sand, and will hold together when squeezed.
  • Pour the Biscoff crumbs into a 9" pie plate and press them up the sides to form the edges first. Then evenly distribute crumbs into the bottom of the pie plate and pack it down.
  • Steam the sliced carrots until extremely fork tender, about 20-30 minutes.
  • Transfer the carrots to a blender, with the honey, sugar, water, vanilla and salt. Blend until completely smooth.
  • In a medium bowl, whisk together the eggs and cream until smooth. Add the carrot puree and whisk until combined.
  • Transfer the carrot filling to the prepared pie crust and bake in the pre-heated oven for 45-55 minutes; do not overbake to avoid cracking.
  • Let the pie cool to room temperature then refrigerate for 4 hours.
  • Serve with whipped cream and optionally a candied carrot garnish.

Notes

The pie can be served warm or chilled. It's best to refrigerate for better slicing.
