Ingredients
  

Meatloaf

  • 2 large eggs
  • 0.5 cup unsalted chicken broth or stock
  • 1 cup panko breadcrumbs
  • 1 tablespoon olive oil plus more for greasing
  • 1 tablespoon minced garlic
  • 0.75 cup minced yellow onion
  • 0.5 cup finely chopped celery
  • 2 pounds ground beef 85% lean
  • 2 ounces parmesan cheese finely grated, about 1 cup
  • 2 tablespoons tomato paste
  • 1 tablespoon finely chopped parsley
  • 2 teaspoons soy sauce
  • 1.5 teaspoons worcestershire sauce
  • 1 teaspoon paprika sweet or smoked
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon chopped fresh thyme or dried

Glaze

  • 0.33 cup pure maple syrup
  • 0.25 cup tomato paste
  • 1 tablespoon apple cider vinegar
  • 0.5 teaspoon Worcestershire sauce
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper

Instructions
 

Preparation

  • Preheat the oven to 350ºF (177ºC).
  • In a medium bowl, whisk together eggs and chicken broth. Add breadcrumbs and allow to absorb moisture.
  • Heat a skillet over medium heat, add olive oil, garlic, and sauté until fragrant. Add onions and celery, sauté until tender.
  • In a large bowl, mix ground beef, Parmesan cheese, breadcrumb mixture, cooled vegetables, tomato paste, parsley, soy sauce, Worcestershire sauce, paprika, salt, pepper, and thyme by hand.
  • Lightly grease a loaf pan and press the meatloaf mixture into the pan, shaping the top.
  • Bake until internal temperature reaches 135ºF to 140ºF, about 45 to 55 minutes.
  • In a small bowl, whisk together the glaze ingredients.
  • Remove the meatloaf, drain excess juices, and increase oven temperature to 500ºF (260ºC).
  • Spread glaze over the meatloaf and bake in layers until lightly browned and bubbly, about 3 to 5 minutes each layer.
  • Allow the loaf to cool before slicing and serving.

Notes

Use 80-90% lean ground beef for best texture. Store in the refrigerator for up to 5 days.
