Ingredients
  

Turkey and Aromatics

  • 1 turkey approx. 15 pounds see Recipe Note
  • 1 lemon juice
  • Salt and pepper to taste
  • Extra virgin olive oil or softened/melted butter
  • ½ medium onion peeled and quartered
  • 1 rib celery
  • 1 to 2 pieces carrots
  • 1 bunch fresh parsley
  • Several sprigs fresh rosemary, sage, and/or thyme

Instructions
 

Preparation

  • Defrost the turkey several days ahead in the refrigerator or in cold water.
  • Bring the turkey to room temperature before roasting, removing it 2 to 5 hours prior.
  • Remove giblets, rinse, and pat the turkey dry inside and out.
  • Preheat the oven to 400°F.
  • Add aromatics and truss the turkey, ensuring the cavity is filled with onion, parsley, carrot, and celery tops.
  • Rub the outside of the turkey with butter or olive oil, sprinkling with salt and pepper.
  • Place the turkey breast side down on a rack in a roasting pan and add herbs underneath.

Notes

Stuffing is not cooked inside the turkey for even cooking; giblets can be used for stock or gravy.
