Ingredients
  

For the crust

  • 200 g Speculoos
  • 80 g Unsalted butter melted

For the filling

  • 75 g Granulated sugar
  • 2 pieces Eggs
  • 65 g Thick cream
  • 375 g Cream cheese
  • 1 pieces Egg yolk
  • 15 g All-purpose flour
  • 1 pieces Lemon juice and zest
  • 2 pinches Vanilla powder

Instructions
 

Crust preparation

  • Crush the speculoos cookies with a pestle or food processor to obtain a fine powder. Mix carefully with melted butter.
  • Spread the mixture in the mold, pressing firmly with the bottom of a glass. Place in the freezer for a few minutes to set.

Notes

Chill the cheesecake for several hours or overnight for the best texture.
