Ingredients
  

Crust

  • 1 cup all-purpose flour
  • ½ cup unsalted butter softened
  • ¼ cup sugar
  • 1 large egg yolk

Filling

  • 8 ounces cream cheese softened
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 medium peaches sliced

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine flour, softened butter, sugar, and egg yolk. Mix until a dough forms.
  • Press the dough into a muffin tin to form small tart shells.
  • Bake the crusts for 15 minutes or until golden.
  • In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  • Fill the cooled tart shells with the cream cheese mixture.
  • Top with sliced peaches.
  • Chill for at least 10 minutes before serving.

Notes

These mini tarts are best served chilled and can be garnished with mint for extra flavor.
