Ingredients
  

Raspberry Chocolate Truffles

  • ¾ cup heavy cream plus 2 Tbsp
  • 1 cup semi-sweet or dark chocolate chopped up finely, at least 60% cocoa solids
  • 2 tablespoon unsalted butter cubed
  • 1 tablespoon light corn syrup optional
  • ½ teaspoon fine salt
  • cup freeze dried raspberry powder

Truffle Coating

  • 1 cup semi-sweet or dark chocolate chips
  • 1 tablespoon vegetable shortening or coconut oil

Optional Decorations

  • 2 tablespoon freeze dried raspberry powder

Instructions
 

Making Truffles

  • Heat heavy cream in a microwave until it begins to bubble.
  • Pour in chocolate, butter, corn syrup, and salt; let sit for 1 minute.
  • Stir until smooth; heat again if necessary.
  • Fold in freeze-dried raspberries.
  • Cover and let sit for an hour to thicken.
  • Scoop out 1 tablespoon pieces and roll into balls.
  • Melt chocolate chips and shortening for coating.
  • Dip truffles in chocolate and scrape off excess.
  • Garnish with crushed raspberries.

Notes

These truffles can be stored for up to 2 weeks in the fridge or 1 month in the freezer. Use parchment paper between layers to prevent sticking.
