Ingredients
  

Roasted Red Peppers

  • 2 cups Roasted red peppers chopped
  • 1 cup Cherry tomatoes halved
  • 1 cucumber Cucumber diced
  • ¼ cup Red onion finely chopped
  • ¼ cup Fresh parsley chopped

Dressing

  • 3 tablespoons Olive oil
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic minced
  • salt Salt to taste
  • pepper Black pepper to taste

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Chop the roasted red peppers and other vegetables.
  • In a separate bowl, whisk together the dressing ingredients.
  • Combine all ingredients in a large bowl and drizzle with dressing.
  • Toss gently to combine and serve immediately.

Notes

For added flavor, let the salad sit for a few minutes before serving to allow the dressing to soak in.
