Ingredients
  

For the Salmon Balls

  • 1 lb fresh salmon, cooked and flaked
  • ½ cup almond flour (or gluten-free breadcrumbs)
  • 2 eggs
  • 2 tablespoon chopped fresh parsley
  • 2 green onions, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon Dijon mustard
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • Olive oil spray (for baking)

For the Creamy Avocado Sauce

  • 1 ripe avocado
  • ¼ cup Greek yogurt (or dairy-free yogurt)
  • 2 tablespoon lime juice (freshly squeezed)
  • 1 clove garlic
  • 2 tablespoon fresh cilantro or parsley
  • Salt to taste
  • 2–3 tablespoon water (to thin the sauce as needed)

Instructions
 

Salmon Ball Preparation

  • Bake the fresh salmon at 375°F for 15–20 minutes until it flakes easily. Let cool, then flake.
  • In a large mixing bowl, combine the flaked salmon, almond flour, eggs, parsley, onions, garlic, mustard, paprika, salt, and pepper. Mix until just combined.
  • Scoop about 1 ½ tablespoons of the mixture and roll into balls; place on a parchment-lined baking sheet.
  • Preheat oven to 400°F and bake salmon balls for 18–20 minutes, flipping halfway through.

Creamy Avocado Sauce Preparation

  • While the salmon balls are baking, blend avocado, yogurt, lime juice, garlic, cilantro, and salt in a food processor until smooth.
  • Add water little by little until the desired consistency is reached.

Serving

  • Serve warm salmon balls drizzled with creamy avocado sauce or on the side for dipping.

Notes

These salmon balls are just as tasty cold as they are warm. Perfect for meal prepping or packing into a lunchbox. Experiment with herbs like dill or basil for different flavors.
