Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium yellow onion chopped
  • 2 cloves garlic minced
  • 1 butternut squash (about 2 pounds) peeled, seeded, and cubed
  • 4 cups vegetable broth (or chicken broth)
  • 1 teaspoon dried sage
  • ½ teaspoon dried thyme
  • ¼ teaspoon nutmeg
  • Salt to taste

Instructions
 

Preparing the Butternut Squash and Aromatics

  • Peel the butternut squash using a sharp vegetable peeler to remove the skin.
  • Cut the squash in half lengthwise and scoop out the seeds and stringy pulp.
  • Cut the squash into roughly 1-inch cubes.
  • Chop the onion into small pieces and mince the garlic.

Sautéing the Aromatics and Squash

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until softened and translucent for 5-7 minutes.
  • Add minced garlic and cook for another minute until fragrant.
  • Stir in the cubed butternut squash, coating it with olive oil and aromatics.

Simmering the Soup

  • Pour in the vegetable broth until the squash is mostly covered.
  • Stir in dried sage, thyme, and nutmeg.
  • Season with salt and pepper to taste.
  • Bring the soup to a simmer, then reduce heat, cover and let simmer for 20-25 minutes until tender.

Blending the Soup

  • Blend with an immersion blender until smooth and creamy.
  • If using a regular blender, carefully transfer in batches and blend until smooth.
  • Adjust the consistency by adding more broth or simmering uncovered if too thin.
  • Taste and adjust seasoning as needed.

Serving and Garnishing

  • Ladle the soup into bowls and serve hot.
  • Top with optional toppings such as pumpkin seeds, croutons, or cream.
