Pasta and Vegetables

  • 1 pound pasta
  • 2 cups cooked corn kernels
  • 1 red bell pepper, diced
  • 0.5 red onion, finely chopped
  • 1 jalapeno pepper, seeded and minced

Dressing

  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 0.25 cup freshly chopped cilantro
  • 1 unit Juice of lime
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Preparation

  • Cook the pasta by boiling it in salted water, following the package instructions. Rinse the cooked pasta under cold water and set aside.
  • Prepare the dressing by whisking together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper in a small bowl.
  • Combine the cooked pasta, corn kernels, diced red bell pepper, chopped red onion, and minced jalapeno pepper in a large mixing bowl. Pour the dressing over the ingredients and toss gently to coat.
  • Sprinkle freshly chopped cilantro over the salad and adjust seasoning with salt and pepper. Refrigerate for at least 30 minutes before serving.
  • Enjoy the Street Corn Pasta Salad chilled, allowing the flavors to meld together.

Notes
