Ingredients
  

Meat

  • 1.5 to 2 pounds Boneless, Skinless Chicken Breasts

Sauces and Seasoning

  • 1 cup Sweet Chili Sauce store-bought or homemade
  • 2 tablespoons Soy Sauce for savory flavor
  • 4 cloves Garlic minced
  • 1 tablespoon Ginger minced
  • 2 tablespoons Vegetable Oil for cooking
  • ¼ cup Cornstarch for coating
  • Salt and Pepper to taste

Garnish

  • 2 Green Onions sliced
  • 1 tablespoon Sesame Seeds

For Serving

  • Rice or Noodles Jasmine rice, basmati rice, or noodles of choice

Instructions
 

Preparation

  • Cut the chicken breasts into bite-sized pieces. Combine sweet chili sauce, soy sauce, minced garlic, and minced ginger in a bowl. Add chicken and marinate for at least 30 minutes in the refrigerator.

Coating the Chicken

  • In another bowl, place cornstarch and season lightly with salt and pepper. Coat marinated chicken in cornstarch for a crispy texture.

Cooking the Chicken

  • Heat oil in a skillet over medium-high heat. Cook chicken in a single layer for 4-5 minutes on each side until golden brown.
  • Once cooked, transfer chicken to a plate lined with paper towels to drain excess oil.

Glazing the Chicken

  • In the same skillet, add remaining marinade and bring to a simmer to thicken. Add fried chicken back into the skillet and toss until coated. Cook for an additional 2-3 minutes.
  • Taste the glaze and adjust seasoning as desired.

Serving

  • Transfer the glazed Sweet Chili Chicken to a serving platter.
  • Garnish with sliced green onions and sesame seeds. Serve with rice or noodles.

Notes

For a spicier variation, add sriracha or more sweet chili sauce to the glaze as desired.
