Ingredients
  

Bacon and Potatoes

  • 4 slices bacon
  • 2 tablespoon canola oil
  • 4 cups potatoes, cut into 1-inch cubes
  • 2.5 tablespoon Old El Paso™ original taco seasoning mix from 6.25 oz container

Tortillas and Eggs

  • 8 pieces soft corn tortillas (6 inch)
  • 8 pieces eggs, well beaten

Cheese

  • 0.5 cup Monterey Jack cheese, shredded (2 oz)

Instructions
 

Bacon Preparation

  • Preheat your oven to 375°F. Arrange the bacon slices on an ungreased cookie sheet with sides. Bake for 10 minutes until crisp. Let cool for 5 minutes and chop.

Potato Cooking

  • Heat canola oil in a skillet over medium heat. Add cubed potatoes and coat in oil. Sprinkle taco seasoning and cook for 15-20 minutes until soft.

Tortilla Preparation

  • Arrange soft corn tortillas in an ungreased baking dish to form open taco shells.

Egg Scrambling

  • In a skillet, cook well beaten eggs over medium heat, stirring until just set.

Taco Assembly

  • Fill each tortilla with seasoned potatoes, scrambled eggs, chopped bacon, and top with shredded cheese.

Baking

  • Bake assembled tacos in the oven at 375°F for 10 minutes.

Notes

These tacos are best served hot right after baking to enjoy the melted cheese.
