Ingredients
  

Apple Pie Filling

  • 2 large apples, peeled, cored, and diced 1 Granny Smith and 1 Honeycrisp recommended
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 teaspoons apple cider or apple juice
  • 1 teaspoon cornstarch

Pie Dough

  • 2 cups all-purpose flour, sifted
  • 4 tablespoons butter, cubed
  • 2 large egg yolks
  • cup milk, hot
  • ¼ teaspoon salt

Pie Glaze

  • ½ teaspoon vanilla extract
  • 1 tablespoon powdered sugar
  • ½ cup milk
  • oil for frying

Instructions
 

Preparation

  • Peel, core, and dice 2 large apples into small cubes. Recommended apples are 1 Granny Smith and 1 Honeycrisp for balance.
  • Combine the apples, brown sugar, cinnamon, and vanilla in a saucepan and cook over medium heat for about 3 minutes until juices start to form.
  • In a small bowl, combine the apple cider and cornstarch. Pour into the saucepan, then increase heat to high and cook until thickened, about 3 minutes while stirring constantly.
  • Remove from heat and set aside.
  • To make the dough, sift the flour in a mixing bowl. Cube the cold butter and work it into the flour until it looks like tiny lumps.
  • In a separate bowl, mix egg yolks and salt. Heat milk until steaming and slowly pour it into the egg mixture, stirring constantly.
  • Combine the milk-egg mixture with the flour mixture and stir until a dough forms. Knead for 1 minute until smooth.
  • Divide dough into 6 equal pieces and roll each into a ball. Roll each ball into a circle.
  • Fill each circle with 2 tablespoons of apple pie filling, fold in half, and pinch the edges to seal. Crimp with a fork.
  • Heat oil in a frying pan to 350°F. Fry pies for about 2 minutes per side or until light golden brown.
  • Set fried pies on paper towels to absorb excess oil.
  • To make the glaze, whisk together powdered sugar, vanilla, and milk until smooth. Glaze while still warm.
  • Let glaze set for a few minutes before serving.

Notes

Leftover fried apple pies can be wrapped in a paper towel or tea cloth and stored in an airtight container at room temperature for up to 3 days. They can also be refrigerated and re-heated in the microwave.
