Ingredients
  

  • 1 large butternut squash peeled, seeded, and cubed
  • 2 tablespoons olive oil for roasting
  • 1 medium yellow onion diced
  • 2 cloves garlic minced
  • 1 medium carrot peeled and chopped
  • 4 cups vegetable broth low-sodium
  • ½ cup coconut milk full-fat
  • 1 teaspoon ground nutmeg
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Preheat your oven and prepare the butternut squash by peeling, seeding, and cubing it.
  • In a large pot, heat olive oil over medium heat and add diced onion and minced garlic. Sauté until translucent.
  • Add chopped carrot and cubed butternut squash to the pot, stirring well.
