Ingredients
  

Vegetables

  • 1 large butternut squash peeled, seeded, and cubed
  • 1 medium yellow onion diced
  • 2 cloves garlic minced
  • 1 medium carrot peeled and chopped

Liquids

  • 4 cups vegetable broth low-sodium recommended
  • ½ cup coconut milk full-fat is preferred

Fats and Seasonings

  • 2 tablespoons olive oil for roasting
  • 1 teaspoon ground nutmeg for warmth

Cooking Instructions

  • Heat olive oil in a saucepan over medium heat. Add onions and sauté until translucent.
  • Add garlic and carrot, cooking for another 2-3 minutes.
  • Stir in cubed butternut squash and sauté for approximately 5 minutes.
  • Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 25 minutes until squash is tender.
  • Blend the soup until smooth. Stir in coconut milk, nutmeg, salt, and pepper. Adjust seasoning if necessary.

Notes
