Ingredients
  

  • 1 pound refrigerated pizza crust dough Trader Joe's garlic & herb dough is recommended
  • 24 medium cloves garlic about 2 heads, separated, peel left on
  • 2 tablespoons olive oil plus more for working the crust
  • 1 cup part-skim ricotta cheese whole milk ricotta works too
  • 2 tablespoons chopped fresh basil
  • 1 teaspoon honey
  • ½ teaspoon dried oregano
  • ½ teaspoon kosher salt more for sprinkling the garlic
  • ¼ teaspoon freshly ground black pepper
  • 10 ounces frozen chopped spinach thawed and squeezed to remove any excess moisture
  • 2 cups shredded mozzarella cheese divided, about 8 ounces

Instructions
 

  • Preheat oven to 375 degrees Fahrenheit.
  • Drizzle a baking sheet with a little olive oil and place the pizza dough on top to rest.
  • Lay out a large square of foil and place the garlic cloves on top. Drizzle with 1 tablespoon olive oil and sprinkle with kosher salt. Fold the foil into a sealed packet and roast the garlic until soft, about 25 minutes.
  • Add 8 of the peeled garlic cloves to a small bowl. Smash with a fork and mix with ricotta, 2 teaspoons olive oil, basil, honey, oregano, salt, and pepper.
  • Stretch the pizza crust into a large round and place on greased cookie sheet or pizza stone.
  • Top the crust with tablespoon-sized mounts of ricotta, scatter with spinach and remaining garlic cloves. Add mozzarella cheese.
  • Bake at 450 degrees Fahrenheit until the crust is golden and the cheese is melted, about 9-10 minutes.
  • Allow to cool slightly before slicing into wedges and serving.

Notes

If using chicken, rub with olive oil and cook until internal temperature reaches 165 degrees Fahrenheit. Cut into chunks before adding to pizza if desired.
